Osechi is a traditional Japanese New Year's meal that consists of a variety of special dishes which are carefully prepared and arranged to symbolize good luck, prosperity, and health for the coming year. It's a way for people to welcome the new year with tradition and auspicious food.

〜壱の重〜 First Layer

数の子　Kazunoko
- A herring roe, tiny fish eggs in their enclosing skein.
- It is eaten to pray for the prosperity of descendants.
  数の子は子孫繁栄を願って食されます。
黒豆　Kuromame
- Sweetened black bean.
- Mame, meaning 'bean' in Japanese, has same pronunciation as another Japanese word 'Mame' meaning 'diligence'. Thus, this dish is eaten to encourage work and academic achievement.
  黒豆は労働や勤勉を奨励するために食されます。
  「マメ」は「勤勉」を表す「マメ」と同じ発音なので、食べるとマメになるといわれています。
田作り　Tazukuri
- Caramelized Anchovies.
- Used as rice paddy fertilizer in the old days, Japanese anchovies symbolize prayers for a fruitful catch and harvest..
  田作りは豊作を意味しています。
  昔は稲田の肥料として使われていました。
たたきごぼう　Tataki-gobo
- Pounded burdock root.
- Gobo, or Burdock, has long, straight roots underground. It is eaten to pray for the foundation of the house to be strong.
  地中に長く真っ直ぐ根を張るごぼう。家基礎が堅牢である事を願う。
紅白かまぼこ　Ko-Haku Kamaboko (Amano Fishcake Inc.)
- Fish paste cake with combination of red and white colors, or 'Ko-haku'.
- Red represents an amulet or joy, while white expresses purity, holiness. The combination of both colors brings good luck and happiness. The dome shape also represents the rising sun.
  紅白かまぼこは、赤と白の2色で、赤は「慶び」、白は「神聖」を意味します。

伊達巻　Datemaki
- Sweet, rolled omelet with fish paste.
- Because its shape resembles a scroll (ancient book), it is eaten with a wish for academic achievement.
  形が巻物に似ているため、学業成就を願い食します。
栗きんとん　Kurikinton
- Mashed sweet potato with sweet chestnuts.
- This dish represents wealth and prosperity due to its golden color.
  栗きんとんは潰したさつまいもと甘栗でできています。黄金色をしているので金運が上がるといわれています。
昆布巻　Kobumaki (Fresh Salmon from Hilo Fish Co.)
- Kelp roll with Salmon.
- Its name is a play on words with the Japanese verb “yorokobu,” meaning “to rejoice,” and hence a lucky charm.
  昆布巻とは鮭の昆布巻です。
  昆布巻き「konbu rolls」の「こぶ」は「よろこぶ」と韻をふみ縁起を担いでいます。

〜弍の重〜 Second Layer

海老　Ebi (Fresh shrimp from Kauai)
- Boiled prawns.
- The long “beard” and bent “waist” of this symbolize old age and a long life.
- 海老の長いヒゲと曲がった腰に見えることから、長寿を祈り食します。

鮑の酒蒸し　Sake-steamed Awabi (Fresh XL size abalones from Big Island Abalone Corp.)
- Abalone.
- As it has a long life span, about 15 to 20 years, it represents longevity.
- 鮑は15−20年生きるので、長生きの象徴とされています。

鰤の照り焼き　Buri no Teriyaki (Fresh Buri from Suisan Company LTD)
- Teriyaki yellowtail.
- Yellowtails are called by different names based on the growth size in Japan, just like a human landing on better positions as their career advances. Therefore, yellowtail is nicknamed ”a fish frequently promoted” (Shusseuo 出世魚).
- 鮑は出世魚なので、仕事の出世に縁起が良いとされています。

紅白なます　ko-haku namasu
- Pickled daikon and carrot.
- Same as Kohaku Kamaboko, red represents an amulet or joy, while white expresses purity, holiness. The combination of both colors brings good luck and happiness.
- 紅白かまぼこと同じく、縁起が良い紅白色です。

〜参の重〜 Third Layer

筑前煮　Chikuzen-ni
- Mix of simmered root vegetables.
- Boiling a variety of ingredients in the same pot symbolizes family harmony.
- さまざまな食材を共に煮込むことから、家族の調和を象徴しています。

- a dish of Surume (dried squid), kombu, carrot, and kazunoko marinated in a sweet shoyu-based sauce.
